I feel like the only weirdo in the world that cannot stand seafood! I even lived in Rhode Island while in elementary school... right on the ocean... watched my parents make lobster dinners weekly... and still cannot stand it. And to top it off my moms favorite restaurant was and still is Red Lobster... so you guessed it... we dined there frequently -_-
Thankfully Red Lobster has a chicken option and idk if it's because I'm use to it, so it's comparable to a childhood "home cooked meal memory" or if it really is fantastic.... regardless..... I just LOVE the Cajun Chicken Pasta! So when I saw BuzzFeed post a Red Lobster copy cat article & saw they included Cajun Chicken Pasta.... EEeeeekkk!!!! I was pretty excited to try it out. And surprisingly it's as close as your going to get to eating Cajun Chicken Pasta in your own home!
RECIPE ~ From BuzzFeed
2 boneless skinless chicken breasts, cut into thin strips or chunks
4 ounces linguine
2 tsp cajun seasoning
2 Tbsp butter
2 cup heavy whipping cream
1/4 tsp salt
1/4 tsp dried basil
1/8 tsp ground black pepper
1 garlic clove, minced
1/4 cup grated parmesan cheese
In a large skillet over medium heat, sauté chicken in butter or margarine & Cajun seasoning until chicken is tender, about 5 to 7 minutes.
in a large pan add heavy cream, basil, salt, garlic, black pepper and heat through.
Pour sauce over hot linguine and toss with Parmesan cheese.
