Pineapple Chicken Fried Rice
I am such a sucker for all things pineapple!!! Pineapple is my favorite fruit and I add it to EVERYTHING!!! Even fried rice. It’s my absolute favorite of all fried rices. Unfortunately, every time I order take-out pineapple fried rice from a restaurant, the pineapple chunks are always so gigantic! Sometimes full rings of pineapple just tossed into the rice. It’s my biggest pet peeve, so I had to make a homemade version to my liking!
Pineapple Chicken Fried Rice
This pineapple fried rice recipe is conveniently loaded with bite-sized pineapple chunks, just bursting with all of their juicy sweetness. It’s also easy peasy to whip up, making it a fantastic weekday dinner option. It can also easily be a clean-out-the-fridge meal with all those lingering fruits & veggies!

Oh my yum! I love, love, love fried rice of any kind. Never thought of making it with pineapple, but what a great tip about using boxed rice! I usually do ham fried rice, but I think I'll add some pineapple to it this time. And the way you presented it in a pineapple??? Very creative. Great pics!

This looks so so good! I've been wanting to try it but unfortunately I'm allergic to pineapple so I can't. But friend rice is definitely my favorite, and a staple in my house!

I absolutely love fried rice! Take out gets expensive, so this is a great alternative. I love the way you presented it in the pineapple- so cute!

I love pineapple in fried rice, but I never thought of serving it in the pineapple, I love that idea! I'm going to have to surprise my family by serving it this way.

This looks so fun! I'm definitely going to have to talk my husband into making this. It shouldn't be hard, he loves fried rice!

I love pineapple too, but I haven't ordered Chinese food with it yet. I like the idea of being able to make it at home on my own.

I love pineapple fried rice and sometimes I order it from a local Thai restaurant but I've never thought to try and make it myself. I'm not exactly a talented cook but my husband is and he'd probably enjoy trying to make this.
