If you're anything like me, your weekdays can be pretty hectic!!! Between kiddos, work and hubby's, dinner can sometimes take the back burner! When one of these crazy weeks hit, I'm all about the crockpot meals and foil dinners!!! Anything that I can make ahead of time or just dump and forget about gets an A+ from me!
Foil dinners can be prepped the night before, heck, even a couple days before, and when dinner time hits, just toss them in the oven. Nothing easier and more convenient than that!
This week I'm sharing my Lemon Pepper Foil dinner! Always a hit with the family. Even the little one will eat everything minus the green. Hopefully one day she gives those yummy beans a try!! The lemon flavor definitely makes the green beans one delicious side dish.
You can use chicken in your foil dinner like I have, or even a turkey breast or fish if that's your fancy!
Slice your lemon. Slice half in slices and save half for squeezing
Lay your chicken breast on the foil
Toss in your green beans and potatoes
Sprinke with salt and pepper
Squeeze your lemon.
Place lemon slices on top
Sprinkle with garlic
wrap up and cook on 450 for about an hour.
Open up and enjoy!
