These Heathy Banana Oat Muffins are seriously going to be the yummmiest muffins you’ll ever make! I’ve made these Heathy Banana Oat Muffins hundreds of times because they are easy peasy to make, they call for simple ingredients, and they turn out perfectly every single time!!! Nice and crispy on the outside and soft and fluffy on the inside. Trust me, this will quickly become your favourite muffin recipe!
These Muffins are easy enough to make with your kids! Trust me, I make these with my 6 year old at least once a month and they come together quickly and simply and the end product is absolutely fantastic! Also perfect for those picky eaters since who doesn’t love bananas?!? Enjoy!!!
2 medium sized bananas – the more ripe the better
1/2 cup fat free milk
2 tbsp. vegetable oil
1 tsp. vanilla extract
2/3 cup all purpose flour
1/2 cup Quaker oats
1/3 cup granulated sugar
1 3/4 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
Preheat oven to 375 degrees and line a muffin pan with 9 cupcake liners or spray the wells with non-
stick spray. In a large bowl, add the bananas, milk, vegetable oil, egg and vanilla.
Mix until well combined.
In a small bowl, add the remaining dry ingredients and mix until combined.
Scoop the batter into your muffin pan.
Bake for 18-20 minutes, or until a toothpick comes out
clean. Makes 9 muffins.
Best served warm! Store in an airtight container on the counter.
