On to recipe number 3 of blogging my "not so pretty, yet totally delicious" recipes I have neglected to share due to the questionable photos I would end up with! I really do wish the whole "perfection" theme of Pinterest would somewhat die down a bit! I totally get that pretty things are fabulously awesome, but not all things in life are fabulously forgiving on the eyes, such as these yummy Smashed Potatoes. I should be proud to share all this deliciousness since it really is just that, deliciousness! But here I sit sorta self-conscious to even post this anywhere past my blog because of its lack of food artist beauty.
But here is the latest "not so pretty" recipe to make it's blog debut, Garlic Parmesan Smashed Potatoes! Totally yummy & easy peasy to make! Even my cooking has newbie hubby can make these!
1 TBSP Galic
1/4 TSP Pepper
1 TSP Salt
2 TBSP Olive Oil
2 TBSP Butter
boil potatoes until they are soft enough for a fork to go through comfortably.
While Potatoes are boiling, take a pan & melt you butter and add your garlic, salt, pepper & olive oil. Mix well.
Once Potatoes are soft, drain the water.
Place Potatoes on a large pan & smash your tatos with a spatula. My hubby likes using a fork when he makes them, so I guess it's whatever you fancy for a smash utensil.
Drizzle your butter mixture onto the Smashed Potatoes.
Bake on 350 for about 15 minutes.
After 15 minutes, take the Smashed Potatoes out of the oven and sprinkle your Parmesan cheese on top. Place your Smashed Potatoes back into the oven and turn your temp up as high as it goes. Keep them in the oven until you see your Potatoes turn gold in color. ( about 5ish minutes)
Take out of the oven once golden and enjoy!
