So this past weekend we traveled to San Antonio & had our families annual Holiday Party! The theme was Italian this year & when I first heard I was to bring an Anti Pasto salad?!?! Ughhh... I was not very excited since that has seriously gotta be the most boring thing to make Italian wise -_- so I searched the internet & I stumbled across a anti pasto platter! I was suddenly sorta excited to make my dish. 1/2 med. head iceberg lettuce
1 small head curley endive or green leaf lettuse I pack thinly sliced pepperoni 1pack thinly sliced genoa salami 1 pack proscuitto ham 1 pack beef bites 1 pint cherry or grape tomatoes 1 c. radishes 1 c. mini carrots or carrot sticks 1 c. ripe & green olives (I bought small quantities of flavored olives at my deli) 8 oz. provolone cheese, cubed OPTIONAL Antipasto dressing (I used a bottle if Italian & had it on the side) Shred lettuce, and spread on a large tray Make a border of endive or green leaf lettuce. Arranges remaining ingredients on top of lettuce. Serve with dressing.
