Anyone else struggle out there with side dishes?!? I can come up with a million main course ideas, but usually end up sticking to one of a few side options. As yummy as my go to mashed potatoes are or even my baked potatoes, one can get sick of eating the same things constantly!
Since I am a total meat and potato gal, I made it a goal to at least jazz up my potatoes. No reason to to eat the same variations when you can simply make potatoes many other ways. Only tricky part was to find potato recipes and flavors my picky hubby and daughter would actually eat! Whenever a recipe calls for more than a few ingredients, both of them get scared to even try things.
Thats when I decided to try shaking mini potatoes in a bottle of balsamic dressing I had sitting in the fridge one evening. Best decision ever because not only were they absolutely delicious, my hubby and daughter enjoyed them as well!!
Your Favorite Balsamic Dressing
Bag if Potatoes
Optional ~ Large Baggie or Use A Large Bowl
Slice your potatoes in half!
Toss Potatoes in the large baggie or bowl
Pour in the bottle of balsamic dressing
Mix well and pour onto a large baking sheet
Spread evenly and bake for 45 minutes of 400 degrees. If you use larger potatoes it can take longer, or smaller potatoes less time.
Optional ~ for extra crispy potatoes I turn my oven up to 550 for the last 5 minutes. That is how I achieved the crispieness in the photo below.
