The ultimate culinary hack! No time to whip up a Pinterest-worthy meal, but fast food sounds awful?! Rotisserie Chickens are the answer my friend! ROTISSERIE CHICKENS!
This is a meal I have been whipping up before I even knew what cooking was! I remember being a teenager & craving Thanksgiving leftover turkey soup about 8 months shy of Turkey Day. It would be that moment I would beg my mom for the few bucks it would cost me for a rotisserie chicken at Wegmans and grab one to make a "fake" thanksgiving leftover soup. Hey chicken is almost like turkey ;-)
Honestly, you can use any flavor rotisserie chicken! Obviously plain chickens work the best, but I have made this soup so many times using anything from lemon to bbq due to plain chickens being sold out and the soup still taste fantastic! Since most of the time that added flavor is on the skin only.
Shredding the chicken is probably the hardest part! An easy peasy thing to do so when this is the hardest part of your culinary creation? I consider that a total win!
These days I've upgraded to a yummy chicken broth, but back in the day when I made this soup up, I would use anything my mom had in the cubord. Sometimes chicken bouillon, other times ramen noodle seasoning, if I got really lucky my mom might of even had a can of chicken noodle soup to use as a base! All work great, but honestly a nice normal chicken broth taste the best!
Then just add your soup favies! Corn, potatoes & noodles do the trick for me since I always have them on hand!
Then add your yummy shredded rotisserie chicken to the mix!
And then let the soup boil for as little or long as you like! If you let the soup boil for awhile, the broth ends up tasting beyond amazing! In a hurry?! This soup still tastes yummy just heating it up!
And there you go! An almost homemade soup prepared and cooked in about 5 minutes!
Who needs fast food when you can have this deliciousness rotisserie chicken soup ready to eat faster than a drive thru wait.
